Dutch Herring
Dutch herring is one of the country’s most iconic foods and an essential experience for visitors wanting to taste something genuinely local. The fish is lightly salted and traditionally matured, giving it a surprisingly soft, buttery texture and a flavour that is much milder than many first-time visitors expect.
In Amsterdam, herring is usually cut into bite-sized pieces and served with chopped raw onions and pickles. You can also order a broodje haring, which combines the same fish and garnishes inside a soft white roll. The famous method of holding the herring by its tail and lowering it into your mouth is fun to try, but eating it in pieces is equally traditional, particularly in Amsterdam.
Herring is available throughout the year, but the arrival of Hollandse Nieuwe around June marks the beginning of the new season. This first catch is especially prized for its rich, tender and creamy texture.
