Oeuf is one of Amsterdam's most original brunch concepts and has built an entire menu around one timeless ingredient: the egg. Opened in 2019 in De Pijp, the restaurant was founded by actor and DJ Géza Weisz together with restaurateurs Tijn Verstappen and Jeroen van der Linden. Their inspiration came from travels abroad, where egg-focused restaurants were much more common, leading them to create a concept unlike anything Amsterdam had seen before. From Eggs Benedict and shakshuka to Croque Madame and truffle specials, nearly every dish contains eggs prepared in different ways and inspired by cuisines from around the world. The menu is complemented by specialty coffee, cocktails and homemade pastries, making Oeuf popular from breakfast until evening.
