Restaurant Watergang is one of Amsterdam's most charming hidden gems and occupies a narrow canal house in the Weteringbuurt. Opened in 2019, the intimate restaurant was founded by chef Tim van Grootheest and maître-sommelier Mo Schuttel, who previously worked at renowned establishments including Hotel De L'Europe and Toscanini. Their vision was simple: create a warm table d'hôte experience centred around seasonality, hospitality and outstanding wines. Rather than offering an à la carte menu, Watergang serves a surprise tasting menu that changes regularly according to the seasons. Vegetables often play a leading role, while French, Italian and Asian influences subtly appear throughout the dishes. Spread over two cosy floors with ochre-coloured walls, candlelight and white tablecloths, Watergang feels more like being invited to dinner at close friends than visiting a formal restaurant.
