Roux is one of Amsterdam's most exciting new restaurants and opened in 2024 in the heart of the Jordaan. Founded by hospitality professionals with a shared passion for exceptional food and wine, the restaurant combines the atmosphere of a classic French brasserie with a contemporary approach to fine dining. Rather than focusing on tasting menus, Roux offers guests complete freedom to create their own experience through an à la carte menu. The kitchen is led by chefs Sebastiano Guglielmucci and Teun Daemen, who blend French techniques with influences from around the world. Signature dishes are complemented by one of the most impressive wine selections in the city. Under the guidance of owner and wine director Allon Niesen, the cellar contains more than 300 wines with a strong focus on France and Italy. Located on the Westerstraat, Roux features a warm interior with a striking central bar and an open kitchen.
